Krapfen are delicious fried pastries filled with jam, typical of Austrian cuisine. They are soft, indulgent, and perfect to enjoy for breakfast or a snack.
Knead 200 g of flour on the work surface with the yeast dissolved in a few tablespoons of warm milk, form a dough ball and let it rise covered until it has doubled in volume
Meanwhile, sift the rest of the flour onto the work surface, arranging it in a mound, make a well in the center and add the eggs, salt, remaining milk, softened butter, and sugar, and mix the ingredients well until you obtain a homogeneous dough
Incorporate the risen dough ball and work the mixture long and vigorously
Let the dough rise again, covered with a cloth in a warm place for about 1 hour
After this time, work the dough again, let it rest again, then divide it into pieces of 50 g each, shaping them into round forms
Roll out the dough pieces with a rolling pin, place a teaspoon of jam in the center of each disc, and seal it well
