Marsala cookies are crumbly and fragrant sweets, typical of the Sicilian tradition. Made with white flour, cornmeal, butter, and sugar, enriched with Marsala wine and grated orange zest. Perfect to enjoy with a cup of hot tea.
Sift the white flour and mix it with the cornmeal; make a well in the center and add the butter softened at room temperature and cut into pieces, then the sugar, Marsala, egg yolks, and grated orange zest (or lemon zest)
Quickly knead the ingredients with your fingertips without overworking the dough, wrap it in a sheet of plastic wrap, and let it rest in the less cold part of the refrigerator for at least 30 minutes
Roll out the dough to a thickness of 4-5 mm and cut out many small cookies with a cutter of your choice; place them on a buttered and floured baking sheet and bake them in a preheated oven at 180 degrees for 15-18 minutes until they have a light golden color
Remove the cookies from the oven, gently detach them with a spatula, and let them cool completely before serving
Sprinkle them with a little powdered sugar if desired
