Pain D'Épices is a traditional French cake. It is a spiced and fragrant cake made with honey, orange marmalade, white flour, olive oil, milk, baking powder, ground cinnamon, ground ginger, and salt. Slowly heat the honey until it becomes liquid (avoid bringing it to a boil)
Add the orange marmalade and mix well until the entire mixture is warm
In a bowl, sift the flour together with the baking powder, then add a pinch of salt, the spices, the oil, and the milk
Mix by adding the honey and marmalade mixture, then pour everything into a high-sided rectangular mold like a plumcake mold lined with buttered parchment paper
Bake in the oven at 160 degrees for an hour and a half
Let the cake cool in the mold and let it rest for a day before using it
The pain d'épices is excellent for breakfast and can be enjoyed plain or spread with a light layer of butter
