Pampapato is a typical sweet from Ferrara, a city located in the Emilia-Romagna region, in northern Italia. This delicious cake is rich in spicy aromas and is prepared using ingredients such as flour, sugar, whole almonds, cocoa, citrus zests, candied fruit, nutmeg, cloves, cinnamon, water and salt. It is then decorated with chocolate bars and baked in a buttered pan. Pampapato is a true delight to enjoy during the Christmas season.
Mix the flour with the sugar, the whole almonds or coarsely chopped, a chopped mix of blanched citrus zests, the candied fruit cut into cubes (optional), the cocoa, a little salt, the nutmeg, the crushed cloves, the cinnamon and the water until a firm and even dough forms.
Bake the dough in a buttered pan, shaping it like a zuccotto, and allow it to bake for an hour and a half at low heat.
When the dome is cold, brush with melted chocolate until it is covered with a chocolate crust.
