Soak the gelatin sheets in cold water
Blend the berries with half of the cream and a few mint leaves
Strain the mixture and add the sugar
In a saucepan, heat the remaining cream with some mint sprigs
Remove the cream from the heat and discard the mint leaves
Add the well-drained gelatin sheets and then the cream with the blended strawberries
At this point, pour the mixture into molds and let them rest in the refrigerator for about 1 hour
