Pear jam is a delicious and versatile sweet, perfect for spreading on slices of bread or enriching desserts and cakes. The pears are cooked for a long time with sugar, orange, and cinnamon to achieve a soft consistency and rich flavor. This jam can be prepared during the fall when pears are in season and particularly tasty.
Wash and peel the pears, remove the core and seeds, and cut them into pieces
Place them in a steel pot with a bit of cinnamon and the grated orange peel, cover with a glass of water, and cook for 15 minutes
At this point, add the sugar, stir, and continue cooking for about an hour
Once it has reached the right consistency, turn off the heat and put the jam into glass jars
Note: use healthy fruit at the right level of ripeness, avoiding washing it too many times in water and instead rubbing it with a clean cloth; for cooking, prefer steel pots with a thick bottom as this is slow and very long; for glass containers, maximum care and cleanliness are required, and they must be hermetically sealed; finally, if the jam molds on the surface, remove that part, clean the jar, and cover with 90-degree liquor alcohol
