Pear jam is a delicious and versatile spread, perfect for spreading on slices of bread or to enrich desserts and cakes. The pears are cooked for a long time with sugar, orange and cinnamon to obtain a soft texture and a rich flavor. This jam can be prepared during autumn, when pears are in season and especially tasty.
Wash and peel the pears, remove the core and seeds, and cut them into pieces.
Put them in a stainless steel pot with a little cinnamon and the grated peel of the orange, cover with a glass of water and cook for 15 minutes.
At this point add the sugar, stir, and continue cooking for about an hour.
As soon as it reaches the right consistency, turn off the heat and put the jam into glass jars.
Note: use healthy, properly ripe fruit, avoiding washing it too many times in water; instead wipe it with a clean cloth. For cooking, prefer high-bottomed stainless steel pots because the cooking is slow and very long. Be especially careful and keep glass containers very clean; they must be hermetically sealed. Finally, if the jam molds on the surface, remove that part, clean the jar and cover with 90-degree liqueur alcohol.
