Pear Tarte Tatin is a delicious French dessert. The pears caramelized with butter and sugar, enclosed in a crunchy shortcrust pastry, create a unique blend of flavors. Perfect to enjoy with a scoop of vanilla ice cream.
Prepare the shortcrust pastry: rub the butter and 500 g of flour between your hands to mix the ingredients into a pile of crumbs; place it on the work surface, make a well in the center, and add the egg yolks, sugar, vanilla powder, lemon zest, and salt. Then knead everything very quickly with your fingertips to avoid 'burning' the dough; wrap it in a little plastic wrap and let it rest in the refrigerator for about 30 minutes.
Meanwhile, cook 200 g of sugar with 1 tablespoon of water until it turns a nice caramel color; then add the soft butter in pieces, stirring constantly, and pour the caramel into the special tarte tatin mold, covering it completely. Before the caramel solidifies, dip the pear slices in it so they are coated.
