Peel the pears, remove the core, and sprinkle them with the juice of one lemon to prevent browning
Place them in a saucepan, add the rosé wine, sugar, and a cinnamon stick about 4 centimeters long
Bring to a boil
Let simmer for about 10 minutes, then allow to cool
When they are cool, place one pear in the center of each individual plate, slice the others, and arrange them around the whole one like the petals of a flower
Add the strained juice of the second lemon and two tablespoons of sugar to the pear cooking sauce, cook over moderate heat, reducing the syrup by about half
Strain the liquid through a fine sieve and pour it over the pears
Keep them in the refrigerator for at least 2 hours before serving
