Profiteroles are delicious French pastries made from choux pastry filled with cream and glazed with dark chocolate. This dessert has ancient origins and has spread around the world, becoming a classic of international pastry.
Put a glass of water, a pinch of salt, a tablespoon of sugar and 80 g of butter into a saucepan, bring to a boil, then remove the pan from the heat and add the flour all at once, stirring.
Return the saucepan to the heat and cook the mixture, stirring vigorously with a wooden spoon until it pulls away from the sides.
At this point, remove from the heat and add the eggs to the mixture one at a time.
Spoon the dough onto the greased baking sheet forming many small mounds well spaced apart using a teaspoon.
Bake the choux buns in the oven (200 degrees C) for 20 minutes, then turn off the oven and let them cool without opening the door.
When cold, gently remove them from the sheet, make a cut on the base of each and fill them with whipped cream sweetened with powdered sugar, using a pastry syringe.
Break the dark chocolate into pieces and put it in a small saucepan.
