Raspberry panna cotta is a fresh and delicate dessert, perfect for finishing a meal lightly. Soak the gelatin in a bowl of cold water.
Pour the cream into a saucepan and heat it over medium heat; remove it from the heat before it boils and immediately add the sugar, the vanilla and the drained and well-wrung gelatin.
Stir thoroughly with a wooden spoon to ensure the added ingredients are completely dissolved.
Then pour the mixture into a ring-shaped mold with a capacity of 15 l, let it cool to room temperature and then place it in the refrigerator to set for 2-3 hours.
When serving, unmold the panna cotta onto a serving plate, garnish it with the raspberries and the washed and dried mint leaves, and sprinkle with the toasted chopped almonds.
Store the raspberry panna cotta in the refrigerator for up to 2 days.
