Rustic candies are delicious puff pastry bites filled with ground meat, mortadella and grated cheese. They are simple to prepare and perfect for an aperitif or as a main course. This recipe, typical of Italian cuisine, originates from the Emilia-Romagna region and offers an irresistible combination of flavors. Melt a knob of butter in a pan and briefly sauté the meat, stirring often
Remove from the heat, transfer to a bowl and add the finely chopped mortadella, the bread crumbs soaked in milk and squeezed, the parsley, the cheese and two beaten eggs
Season with salt and pepper
Mix everything, making sure the mixture is soft, and form many small balls
Roll out the thawed puff pastry with a rolling pin
Using a fluted pastry wheel, cut out about thirty squares
Place a ball in the center of each, roll them up then twist the ends like candy wrappers
Finally brush them with the egg yolk diluted with a tablespoon of milk
Place the candies on a baking tray lined with parchment paper and bake in the oven at 200°C for about 20 minutes
