In a pan, melt a knob of butter and briefly sauté the meat, stirring often.
Remove from heat, transfer to a bowl, and add finely chopped mortadella, bread soaked in milk and squeezed, parsley, cheese, and two beaten eggs.
Season with salt and pepper.
Mix everything, ensuring that the mixture is soft, and form several small balls.
Roll out the thawed pastry dough with a rolling pin.
Use a pastry wheel to cut out about thirty squares.
Place a ball in the center of each, roll them up, then twist the ends like wrapping candies.
Finally, brush them with egg yolk diluted with a tablespoon of milk.
Arrange the candies on a baking tray lined with parchment paper and bake at 200 degrees for about 20 minutes.
