Semolini are delicious semolina sweets with a soft heart, scented with citrus. They are typical of the Carnival period in Italy and are much appreciated by both adults and children.
The quantities are for 28 cookies
Put the semolina, sifted white flour, wheat germ, sugar, grated citrus zest, and a pinch of salt in a bowl; mix everything well, make a well in the center and place the whole egg and softened butter in pieces
Knead perfectly and form 28 sticks with the dough, as thick as a pencil and about 8 cm long, then cross the two ends
As they are ready, line them up slightly apart on a buttered and floured baking sheet, then bake them in a preheated oven at 190 degrees for about 12 minutes
With a flexible spatula, detach all the cookies and let them cool on white kitchen paper
