Sweet Cigars are delicious butter pastries filled with a cream of whipped egg whites, sugar, and lemon. They are typical of Italian tradition and perfect to enjoy during a snack or after a meal.
Place the egg whites in a bowl and beat them until stiff peaks form, adding a few drops of lemon juice
Gently fold in the sugar and sifted flour, then add the melted and warm butter and a pinch of vanilla powder, and mix to combine all the ingredients well
Butter and flour the baking sheet, then place the batter on it in small heaps and spread each one with a spatula to form rectangles of 4x6 cm; bake them in a hot oven (200 degrees) for 4-5 minutes
When the small rectangles of dough are golden, remove them from the baking sheet and while they are still hot, roll them around a wooden stick to form small cylinders
To have perfect 'cigars', after rolling the dough rectangles around the wooden sticks, tie them one by one with a strip of cloth and leave them to set until completely cool
If you wish to store these sweets, put them away when they are cool
