Preparation

    Place the almonds on a baking sheet, bake and toast them, then chop them finely

    In a bowl, cream the room temperature butter with the sugar using a wooden spoon

    Add the egg yolks one at a time until you get a soft and light zabaglione, then add the whipped egg whites and mix everything with a circular motion from bottom to top

    Divide the sponge cake into two discs and sprinkle them with coffee; then spread the zabaglione on the lower disc, cover with the upper one, add more cream, and sprinkle with chopped almonds
