Sift the flour and put it in a bowl with the sugar, salt, lemon zest, the egg, the butter cut into pieces and the rum. Knead quickly with your hands, form a ball and put it in the refrigerator for half an hour covered with a cloth.
After this time, butter and flour a 25 cm tart pan.
Roll out the shortcrust pastry to fit the 25 cm diameter, creating a raised edge all around. Prick the pastry with a fork, cover the surface with baking paper, place dried beans on top and bake for 45 minutes at 200°C.
Whip the cream.
Remove the shortcrust pastry from the oven, remove the paper and the beans, let cool then spread the whipped cream over the tart and arrange the Marrons Glacés on top.
