The tart is made with a crumbly and buttery pastry, enclosing a soft and fragrant filling of Golden apples, sultana raisins, and dried figs. Sift the flour with the salt onto a work surface, place the butter cut into pieces in the center, and quickly work the mixture with your fingertips, adding 3-4 tablespoons of water and kneading quickly without overworking it
Wrap it in a sheet of plastic wrap and let it rest in the least cold part of the refrigerator for at least an hour
Clean the onions and slice them thinly
Place them in a pan with a knob of butter and let them soften without browning; add a deciliter of water and cook them over very low heat until the water has completely evaporated
Set them aside in a bowl and let them cool completely
Peel the apples, core them, and slice them thinly
Divide the apple slices into 2 parts; place one part in a bowl with the wine and let them marinate for about 30 minutes
Place the other half in another bowl with the lemon juice
Drain the apples marinated in wine and place them in a blender with the onions
Blend until the mixture is well combined and pour it into a bowl
Cut the dried figs into cubes and add them to the apple and onion mixture; also add the sultana raisins, ground ginger, and finely chopped anise seeds
Mix with a wooden spoon and finally incorporate the apple slices marinated in lemon juice
Roll out half of the dough with a rolling pin into a thin disc about 22 centimeters in diameter and place it on a buttered and floured baking sheet
Pour the prepared mixture on top, leaving a free space of about 2 centimeters all around the edge
Roll out the remaining dough into a thin disc 24 centimeters in diameter and cover the mixture, sealing the 2 discs of dough by pinching around the edge
Dilute the saffron with a tablespoon of water and brush the surface of the tart
Place the baking sheet in a preheated oven at 180 degrees and bake the tart for 25-30 minutes
Unmold it onto a serving plate and serve it either warm or cold
