

Tzazichi is a cold Greek sauce made from cucumbers, yogurt and garlic. It is an ideal accompaniment for meat or fish dishes, but can also be enjoyed as a dressing for salads or as a spread on toasted bread. Its freshness and creaminess make it perfect for summer, but it can be appreciated all year round. Preparing it is simple and takes only a few minutes.

Finely chop the garlic, slice the cucumber (but one is a bit too much...) into strips and mix everything with the yogurt. Season with salt, pepper and oil.
This recipe is called tzaziki and is typical of Greece.
The yogurt should be full-fat and fresh; if you make large quantities it's best to strain the yogurt in a fine-mesh cloth and hang it to drain over a spoon for 10 minutes before using it.
