A gourmet dessert where the sweetness of pears meets the enveloping creaminess of Goat Soft Cheese, the scent of edible flowers, and the aromatic touch of lavender honey. A journey through textures, colors, and aromas.
In a blender, work the Goat Soft Cheese with the cream and powdered sugar until you get a soft and velvety cream (you can lightly whip the cream first for a fluffier mousse). Refrigerate.
Peel the pears, slice them thinly and drizzle with a little lemon juice. In a non-stick pan, melt the butter and roast the pear slices for 3-4 minutes per side, until golden but still firm. At the end of cooking, add 2 tablespoons of lavender honey and glaze the pears for 1 minute.
Place the Goat Soft Cheese mousse in the center of the plate, lay the roasted pear slices in a fan shape on top. Decorate with edible flowers and fresh leaves. Drizzle with the remaining lavender honey, and garnish with fig balsamic cream.

Assemble at the moment of serving. The roasted pears and mousse can be stored separately in the fridge for 1 day.
