
Gluten-free and lactose-free tofu waffles. The batter is made from blended tofu with plant-based milk and coconut oil, enriched with rice flour, starch, maple syrup, and cinnamon. They are cooked in a waffle mold and decorated as desired.
Blend the tofu: blend the tofu together with the plant-based milk and coconut oil until you obtain a smooth cream without lumps.
Add the other ingredients and mix until you have a homogeneous batter.
Fill the mold correctly: pour about 2-3 heaping tablespoons of batter into each cavity of the waffle maker.
Use the back of the spoon to push the batter well into the corners and squares of the mold.
Level: do not fill to the brim because the baking powder (if present) will slightly puff it up; leave about 2-3 mm from the edge.
Cook the waffles in the mold until golden brown (follow the instructions of your appliance).
Decorate with chocolate, protein cream, or as you prefer.
