Dolci Evasioni carob syrup is made exclusively with Sicilian carobs and contains nothing but the water necessary to prepare the infusion. Its sweetness comes from the naturally occurring sugar in the fruit. We prepare it in our workshop inside the Syracuse prison according to the traditional recipe of our grandparents, letting the chopped carobs infuse for several hours. The product is then reduced over heat until it reaches the perfect balance between flavor and consistency.
