The Giarratana Onion is a variety of sweet onion of considerable size, with flattened bulbs and a white-brownish skin, cultivated only in the territory of the municipality of Giarratana, in the Iblei mountains, in Sicily. The Giarratana Onion can reach a weight of three and a half kilos! It is a typical Sicilian product and thanks to its particular sweet and never pungent taste, it has been included in the list of traditional Italian agri-food products (P.A.T.) of the Ministry of Agricultural, Food and Forestry Policies. It is also a 'Slow Food presidium' and the entire processing process occurs manually. Sowing takes place starting from late October and transplanting in February - March. Harvest begins in early July and ends in late September. After a few years of sacrifices and hard work, with his savings, he managed to buy his first van with which he began to sell and promote the onion in nearby towns. He was not yet aware that this would lay the foundations for the FAGONE company. Over time, the Giarratana Onion began to be increasingly requested by the market, so in 2006 Salvatore decided to start the transformation of the Giarratana Onion by creating the first line of preserves, managing to pass on the same passion to his children. From that point on, thanks to the father's experience and the children's creativity, the company began to expand and promote its products on a national level!
