The Red Wine Di Nera Bio Frizzante is the sparkling red brother of Bianco di Nera Più from the Milazzo cellars. Obtained from grapes of Nero d'Avola and Nero cappuccio from certified organic farming. Milazzo, producer of our Red Wine Di Nera Bio Frizzante, is a production reality born in Campobello di Licata in Agrigento; they were among the first Sicilian winemakers, between the late seventies and early eighties, to enhance winemaking from indigenous Sicilian grape varieties. Their cellars are mostly underground and designed with the aim of minimizing environmental impact. Built with materials suitable for reducing energy consumption and achieving low emissions in conditioning, and with the aid of technologies for achieving maximum hygiene and ideal care of the product. For pressing, pneumatic presses with central bladder are used, with very low working pressures to operate very gently on the grapes; the maturation of their wines in steel occurs entirely "sur lie" keeping the lees in suspension to favor the transfer of the aromatic components of the yeast into the wine. Their aging cellar extends entirely in the underground part of our cellars and contains over 500 barriques intended for the refinement of both white and red wines, as well as some bases for classic method sparkling wines. Here, the barrels are filled and monitored. The passage in barrique plays a primary role in ensuring the best evolution of our wines. The choice of their woods is fundamental. Our barriques are all produced in the best "tonnelleries" rigorously with oak wood. We use new barriques with a renewal cycle every five years. The most delicate moment: after harvest, pressing, fermentation and the different paths of maturation and refinement, each wine in our collection undergoes this delicate phase, which seals the passionate work of the winemaker and his collaborators, before entering the bottle where it continues to evolve until the moment it is poured into the glass. It is at this stage that the long work of wine creation is completed, a process made of patience and technique that spans, at times, over many years. It is then that the best characteristics of the grape and the Milazzo imprint in winemaking find their synthesis.
