Caro Maestro Red Wine Sicilia IGP Package: 6 Bottles of 0.75 lt The Caro Maestro Red Wine Sicilia IGP is our most complex wine. It is a unique blend determined by the characteristics of each grape variety that composes it, characteristics that naturally vary with each vintage. A tribute to the "maestro" of wine by Bruno Fina. This wine is produced with a “Bordeaux blend”: with “blend” referring to the mixing of different wines by grape variety, while the second term indicates the grape varieties originating from the Bordeaux region in France: cabernet, merlot (and in some vintages, petit verdot), grape varieties also cultivated in Sicily, where they have proven to adapt splendidly. Characteristics: Type: Red Winery: Cantine Fina Variety: Cabernet Sauvignon, Merlot, Petit Verdot Classification: Sicilia I.G.T. Area of Production: Western Sicily Training and pruning: Guyot, with a trellis system. Vineyard altitude: 150/400 m above sea level. Planting density: From 5000 to 5500 plants per hectare. Yield: 50 quintals per hectare. Harvest time: September Aging: 2 years in barriques and 8 months in bottle Alcohol content: 14% vol. Serving temperature: 16/20°C Fermentation: In steel. Aging: In steel, twenty-four months in barrique. TASTING NOTES The Caro Maestro Red Wine Sicilia IGP is a deep wine, very balanced, with an exemplary elegance in its tannins and a savory final length that suggests favorable evolution over time. A wine of great substance and depth, elegant, unmistakable on the nose for its intense spiciness; it is a rich but measured Bordeaux blend, not opulent, powerful yet never heavy, smooth and juicy. PAIRING SUGGESTIONS It pairs well with dishes based on lamb, boiled meat, calf's kidney, duck à l'orange, roasted game, and generally with meats of intense flavor, with a recommended serving temperature between 16-20°C. Cantine Fina: production of 100% Sicilian IGP wine The winery of Bruno Fina has created an efficient and modern structure, transferring all its passion into the rational organization of spaces and processes, with maximum respect for the integrity of the fruit. The surrounding area hosts countless varieties of grapevines destined for wine, but what strongly characterizes the wines is the pedoclimatic variety and the different terroirs. We could never speak generically of Cabernet Sauvignon or Merlot, but only and simply of Sicilian Cabernet Sauvignon or Sicilian Merlot, and the same applies to our KiKè, the Sicilian Traminer. The history that binds this Sicilian winery to its territory is unique, sealed by respect and awareness that producing wine in this environmental context is a responsibility as well as a source of pride. The vineyards of Cantine Fina extend along the hill where the new winery and the structure dedicated to wine tourism are located, largely hosting indigenous grape varieties such as Grillo, Nero d’Avola, and Perricone, for which Bruno continues the frantic search for original clones to restore ancient character to his wines. The highlight is the winemaking department that allows for processing of the grapes with the utmost respect for the integrity of the fruit, and the aging cellar, with a total capacity, among barriques and large barrels, of about 50,000 liters. Temperature and humidity are constantly maintained at ideal values. The bottling department is state-of-the-art, with a dedicated room featuring the new bottling monoblock and an innovative microfiltration system, which allows bottling of wines that have not undergone tiring clarifications and filtrations. The storage and bottle aging department is also temperature-controlled. Cantine Fina is ISO 14001 certified. Production is certified IGT Organic.
