In 2012, fortunately, six farmers invested in relaunching Sicilian Beans Cosaruciaru, coming together in a producer consortium. The Cosaruciaru is a non-climbing annual plant with two production cycles, grown in the open field using traditional methods. It is harvested twice a year, in the spring-summer period and in autumn. The Sicilian Beans Cosaruciaru harvested in the beautiful season are not sold but used as seeds for the following season. Between mid-October and November, the legumes intended for sale and consumption are harvested. What distinguishes Sicilian Beans Cosaruciaru is the particular ivory-white coloration with small brown speckles around the hilum and, of course, its sweet flavor, which has earned it the name by which it is still called today.
