Our Sicilian Vegetarian Ragù is part of Tudia's great Sicilian sauces, ready to pour over pasta. The Sicilian Tomato, present in the Vegetarian Ragù, is the absolute prince of their production. It is the best tomato for making sauces: it is rich in pulp and low in water, making our sauces flavorful and full-bodied, sweet and genuine. It is rich in antioxidants (lycopene) and vitamins A and C and grows in the dry lands in the center of Sicily, between Villalba and the Bilìc Valley. The Sicilian Vegetarian Ragù is a ready condiment for pasta and/or rice, a base or addition for numerous dishes (meat, fish, pizza). It can be stored for over twenty-four months from production, if not exposed to intense light and temperatures exceeding approximately 25 °C. After opening the jar, it should be stored in the refrigerator. The plant grows completely naturally, aired by the wind and kissed by the sun. The double steam cooking preserves smells and characteristics and makes the sauce more digestible. The aromas and extra virgin olive oil are added at the end, and the tomatoes are harvested within 8-10 hours at the most before processing. Long shelf life is guaranteed by natural pasteurization. We do not add pepper, making it suitable for children as well. And they are all gluten free.
