Spinamara is a digestive born in Belpasso, at the foot of Mount Etna. Spinamara encapsulates the colors, flavors, and aromas of Sicily. It was born from the idea of two sisters, Sara and Francesca, who decided to experiment with an ancient recipe found within a manuscript on the history and habits of the Benedictine monks, who during the 16th century inhabited the San Vito Convent on Etna. The year was 1612 and in the convent the plump monks used to savor hearty and tasty dishes. The head steward, accustomed to ingratiating himself with the monks, after meals would serve a liqueur – obtained by mixing prickly pear, bitter orange fruits, cardoon leaves, and aromatic herbs collected from the area – that favored and reconciled the afternoon rest. Sara and Francesca, intrigued by the potential of the historic recipe, recreated the digestive, calibrating it to contemporary taste. The result is a digestive that gives multiple sensations: sweet on impact, fresh on the palate with a pleasantly bitter finish. They thus launched a project entirely "made in Sicily", creating the first digestive of prickly pear, bitter orange, and wild cardoon accompanied by a mix of aromatic herbs that give the product an unmistakable and genuine aroma. "Our aim was to obtain a digestive linked to the fruits of our territory, which could combine modernity and freshness while remaining etched in the consumer's mind for its taste." Spinamara is produced through slow infusion in separate boilers of prickly pear, sun-ripened bitter orange fruits, milk thistle leaves, and an intriguing mix of aromatic herbs. The infusions are carried out separately to best respect the different maturation and maceration times. Only after the maceration process has been completed are the infusions filtered and mixed together. After a resting period, the product is bottled and put on the market. The digestive Spinamara, in addition to being enjoyed at a frozen temperature, is also suitable for mixology and use in cooking and pastry.
