Terre Siciliane Zibibbo IGT "Oxydia" is made from pure zibibbo grapes, carefully selected. Immediately after the manual harvest that takes place at the end of September, the grapes, already in the late ripening phase, are further left to dry; then comes the soft pressing and controlled fermentation to reach an alcohol content of 5-6°C. Wine distillate is added to stop the fermentation process and, above all, to preserve some of the sugars.
