Valpolicella Classico Ognisanti Bertani is a structured and concentrated wine that comes from the Ognisanti cru of the Villa Novare estate. The name derives from the small chapel located in the middle of the vineyard, which gives its name to the plot. Produced with Corvina Veronese and Rondinella grapes, it is the result of a slightly late harvest carried out manually around the second half of October. This delayed harvest is only possible in areas with strong vocation like the Ognisanti cru, which allows this wine to achieve great maturity and concentration. The vinification takes place in thermoconditioned steel tanks and involves a long maceration of the skins and fermentation at not too high temperatures to best express the aromatic potential of the grapes and not to exceed with the extraction of polyphenolic compounds. Subsequently, the wine is separated from the skins and aged in French oak barriques, 1/4 new and 3/4 used, for a period of 18 months before blending and bottling. Pairings: Ognisanti is a wine that pairs well with elaborate and intense dishes, which are softened and enhanced by the velvety notes typical of Valpolicella Superiore. Ideal with grilled meats, roasted meats, game, and aged cheeses.
