Description
The Brigante is a typical Sardinian cheese, made from sheep's milk. It is highly appreciated for its freshness and for recalling the classic taste of milk once tasted. It has a soft and consistent texture. The rind is yellow with the typical striations of basket cheeses. The weight of the wheel is about 1.5 kg. Pairings: Excellent consumed on its own before meals. With Carasau bread and some risottos. Suitable with Trento DOC rosé wines or not very structured red wines. Storage: In the refrigerator or in a cellar at controlled temperature. Processing: the sheep's milk is pasteurized and selected lactic ferments and rennet are added. After breaking the curd, the paste is placed in the typical molds that give the right size. This is followed by a short aging of the cheese. The rind is washed with water and salt. Aging: 23
