Ca del Bosco Annamaria Clementi is the essence of Ca del Bosco, a cuvée composed of reserve wines from the best vineyards of Franciacorta, dedicated to the mother of Maurizio Zanella, the founder of the company: Mrs. Annamaria Clementi. According to the Ca del Bosco method, the grapes are cataloged by vineyard, cooled in a refrigeration cell, cleansed of impurities in a soaking tank system, conveyed through a drying tunnel, selected on a sorting table by expert hands, and then pressed. The pressing occurs in reduction, thus in an oxygen-protected atmosphere to prevent oxidation of phenolic and aromatic components in the musts. Only the very first pressings are used for the Annamaria Clementi cuvée, which are moved without the use of pumps but through gravity using tank/elevators that lift to allow the movement of the must/wine. The Annamaria Clementi selections ferment 100% in barriques where they remain for an additional 6 months and undergo malolactic fermentation. The assembly of the best barriques of Chardonnay, Pinot Bianco, and Pinot Nero constitutes the famous Annamaria Clementi cuvée. This base wine is bottled with the addition of yeast and sugar and left to rest for about 8 years, this long aging process determines a unique aromatic profile. After disgorgement, Ca del Bosco Annamaria Clementi is labeled and uniquely marked for traceability. Pairings: Ca del Bosco Annamaria Clementi is a wine suitable for pairing with a wide range of dishes due to its structure and elegance. Excellent as an aperitif or paired with fish appetizers, even raw or smoked, it pairs perfectly with first and second courses based on fish, even spicy and elaborate. With Ca del Bosco Annamaria Clementi, one can also dare to pair it with a delicate white meat main course and a hard or extra-hard cheese with long aging, such as a 30-month Parmigiano Reggiano or a Bagoss.
