Description
Costera Argiolas is a wine produced with the traditional low red vineyards of Sardinia: Cannonau, Bovale, and Carignano. The vineyards are located in the countryside of the Sarai and Sisini areas at an altitude of about 220m above sea level. The soils are predominantly calcareous with clay lenses. Harvesting takes place in the early morning hours, and the grapes are brought to the winery for destemming. Fermentation lasts about 10-12 days at a temperature of approximately 28-30°C, with repeated pump-overs performed to extract polyphenols and aromatic compounds from the grape skins. Once fermentation is complete, the wine is separated from the skins and placed in glass-lined cement containers where it undergoes malolactic fermentation, followed by an aging period in oak barrels for 8-10 months before bottling and marketing. Pairings: Cannonau Costera Argiolas is a structured wine that pairs well with main courses such as red meat roasts or game. It is also excellent with flavorful pecorino cheeses of medium to long aging.
