Chianti Classico Badia a Passignano is produced in the homonymous estate belonging to the Antinori family, located 3 km south of the Tignanello estate. The Chianti Classico Gran Selezione Badia a Passignano is a 100% Sangiovese whose grapes were hand-harvested around mid-September. Once in the cellar, a sorting operation of the bunches was carried out on a vibrating table, so only the raw material of extreme quality will be vinified. Fermentation is completed in about 10 days at a temperature of 28°C, and maceration continues for another 10 days during which the wine is further enriched with the polyphenolic and aromatic compounds of Sangiovese. Subsequently, the wine is separated from the skins and placed in barriques for malolactic fermentation and future aging of 14 months. At the end of this period, the wine is blended and bottled; before entering the market, the Chianti Classico Badia a Passignano is aged in the bottle for 12 months. Pairings: The Chianti Classico Gran Selezione Badia a Passignano is a great Chianti, a pure expression of Sangiovese in its fullness. Excellent wine paired with great main courses of red meat and game, wonderful with the Bistecca alla Fiorentina from Macelleria Mazza. Excellent with long-aged cheeses, even blue cheeses.
