Ferrari Maximum Rosè is a classic method Trento DOC produced with Pinot Noir and Chardonnay grapes from proprietary vineyards. The Pinot Noir is responsible for the rosè color of the wine as it is vinified with a brief maceration on the skins to extract color and characteristic aromas from the Pinot Noir skins. Grapes are hand-harvested and brought to the winery for pressing. The Chardonnay follows the stages of white vinification while the Pinot Noir (or at least the ripest, depending on the year) is destemmed and placed in a steel vat at a temperature around 8°C for cold maceration. This operation can have a variable duration depending on the ripeness of the Pinot Noir, thus the ease with which the skins release compounds to the must. Once the desired color is reached, the colored must is separated from the skins, selected yeasts are added, and the alcoholic fermentation process begins. Subsequently, the blending phase occurs, where the best wines are chosen to compose the Ferrari Perlè Rosè. Once blended, yeast and sugars are added, and the "tirage" is carried out, followed by bottling the sparkling bases that will re-ferment in the bottle according to the classic method. The Ferrari company for the Perlè line decides to age the wines in the bottle for 36 months before disgorging, ensuring the bubbles are very fine and creamy, the aromas more mature, and in the mouth, Ferrari Maximum Rosè will be more balanced. After disgorging, the bottles are freed from the crown cap and are corked with a mushroom cork, labeled, packaged, and marketed.
