Description
Grana Padano DOP Caseificio Quaglia is a typical Italian cheese produced in accordance with the production regulations. Grana Padano cheese is a PDO product obtained from partially skimmed raw cow's milk, with natural creaming and cooked paste. To ensure the high quality of the product, the production regulations require that the cows follow a diet based on fresh or preserved forage. It is believed that around the year 1135, in the monasteries of the Cistercian monks, there was an attempt to preserve cow's milk, which was available in quantities exceeding daily needs. With some experiments and attempts, they tried to heat the milk and add rennet, and subsequently subjected the result to salting. It was noted that a hard cheese was obtained whose organoleptic characteristics improved with aging. Initially, it was called "cacio" or "caseus vetus," meaning "old cheese," because unlike the foods of the time, this product was suitable for aging without deteriorating. This cheese is called "grana" by the population unfamiliar with the Latin language due to its texture, a name that has persisted to this day. Pairings: Grana Padano is excellent consumed on its own, grated, or as a snack. It pairs excellently with Franciacorta wines. Storage: Store in the refrigerator.
