Haderburg Pas Dosè is a classic method wine produced by the Haderburg winery in South Tyrol. The term Pas Dosè indicates that it is a "dry wine," meaning without residual sugar. The Pinot Noir and Chardonnay grapes are grown at the Hausmanhoff estate in Salorno at an average altitude ranging from 350 to 550 meters above sea level. The grapes are hand-harvested and vinified separately, with fermentation occurring 70% in steel and the remaining 30% in French oak barrels, where Haderburg Pas Dosè remains aging until the spring following the harvest, when it is bottled with the addition of yeasts and sugars for bottle fermentation. Haderburg Pas Dosè ages for 36 months in the bottle before disgorgement. Pairings: Haderburg Pas Dosè is a perfect wine to pair with fish and vegetable-based first courses, roasted and grilled fish, as well as white and red meat preparations.
