It is a hill in Sant'Ambrogio di Valpolicella with predominantly clay and limestone soil, very poor in organic matter, thus having very favorable characteristics for the cultivation of native Veronese grapes such as Corvina, Corvinone, Oseleta. Additionally, the proximity to Lake Garda positively influences its climate. La Grola Allegrini is a blend of native grapes and 10% Syrah, which characterizes its profile. The grapes are harvested separately and brought to the winery for destemming and crushing. Fermentation with maceration takes place in temperature-controlled steel tanks and lasts about 15-20 days depending on the vintage and variety.
