Description
Moliterno is a cheese made with sheep's milk produced in Sardinia. Pecorino Moliterno is an aged cheese excellent when consumed on its own or grated. Moliterno has a savory and strong flavor, with a slight eye formation. Moliterno is made with selected sheep's milk, and the cheese must age for several months before being sold. Sardinian Moliterno cheese is available in various sizes. Pairings: Moliterno is excellent when consumed on its own or grated over first courses. We recommend pairing it with a structured red wine. Storage: Store in the refrigerator, cover the cut part with a cloth. Processing: The raw sheep's milk is heated and calf rennet is added. The curd is broken, usually using a wooden stick. The paste is placed in typical baskets where it takes its characteristic shape, and a light pressing is done to remove the whey. The cheese is dry salted.
