Description
The grapes from which Ronco delle Cime is derived are first destemmed and then placed in a steel tank for a low-temperature maceration (10°-12°C) lasting about 12 hours. This process takes place under a controlled atmosphere for two main reasons: first, to reduce the oxidation of the musts and thus the loss of potentially aromatic compounds, and second, to decrease the use of antioxidants such as sulfur dioxide. Subsequently, the pressing of these grapes gives rise to the musts that ferment in steel and refine on the fine lees for 5 months, during which batonage is performed weekly. Venica's winemaking philosophy is focused on enhancing the territory through the aromatic potential of the wines, which is not altered at all by the use of wood, neither for vinification nor for aging. Pairings: Ronco delle Cime by Venica is a wine that, due to its characteristics, pairs well with fish dishes, even served raw, as it contrasts the fattiness with acidity and sapidity.
