The Sagrantino di Montefalco DOCG Antonelli is a red wine produced in the Umbria region of Italy, specifically in the Montefalco area. This region is renowned for producing high-quality wines, thanks to its temperate climate, clay and limestone soils, and favorable geographic location. The Sagrantino di Montefalco DOCG Antonelli is made exclusively from Sagrantino grapes, a native variety of Umbria. This grape is known for its resilience and ability to adapt to different types of soil. The grapes are hand-harvested, usually between late September and early October, when they have reached the right level of ripeness. The production process of Sagrantino di Montefalco DOCG Antonelli begins with the fermentation of the grapes in stainless steel tanks at controlled temperatures. This phase lasts about a month and allows for maximum extraction of the polyphenols present in the grapes, which give the wine its characteristic intense red color and robust tannins. After fermentation, the wine is transferred to oak barrels for maturation. This phase lasts at least 24 months and allows the wine to develop its complex aromas and flavors. During maturation, the wine is regularly tasted to monitor its evolution and to decide the right moment for bottling. Once bottled, the Sagrantino di Montefalco DOCG Antonelli is left to age in the bottle for at least 6 months before being marketed. This aging period allows the wine to harmonize its tannins and further develop its aromas. The Sagrantino di Montefalco DOCG Antonelli is a wine of great structure and longevity, with aromas of ripe red fruit, spices, and leather notes. On the palate, it is full, warm, and persistent, with robust and well-integrated tannins. It pairs perfectly with red meat dishes, game, and aged cheeses. Pairings: The Sagrantino di Montefalco DOCG Antonelli is a robust and structured red wine, with good acidity and powerful tannins. These characteristics make it ideal for pairing with red meat dishes, such as a nice grilled beef fillet or a red wine braised beef. Its structure and intensity also make it perfect for game-based dishes, like stewed wild boar or roasted venison. As for cheeses, the Sagrantino di Montefalco DOCG Antonelli goes well with aged and intensely flavored cheeses, such as aged pecorino or spicy gorgonzola. Finally, for first courses, a good pairing could be a pasta dish with meat ragù, like the classic tagliatelle with wild boar ragù, or a porcini mushroom risotto, which with its creaminess and earthy flavor balances well with the wine's intensity and structure.
