It is our Cellar, where the material evolves and transforms, where time is the time of wine. During the harvest, ripe fruits arrive at the cellar from every single plot. Every phase respects the integrity of the fruit. After the selection of the bunches, fermentation with indigenous yeasts and gentle pressing follow. After vinification, comes the wait. Weeks, months, years pass slowly in the barrel room, allowing the wine to rest and evolve in its temperament. Man becomes a respectful interpreter of what nature has given him, in the relentless search for the balance that evolves in the Cellar. Knowing how to wait is an art.
