Description
The Zenato Ripasso is a special wine from Valpolicella. The grapes for the production of Ripasso are harvested around mid-October and vinified with maceration for 10-12 days at a controlled temperature. Once separated from the skins, the wine rests in steel until January. In January, the dried grapes for the production of Amarone are pressed, and their pomace, before being pressed, is sprayed with the Ripasso so that the skins, still rich in aromas and polyphenols from the Amarone, impart these compounds to the Ripasso wine. This second maceration lasts about 7-8 days at a temperature of 25-27°C. Subsequently, the Zenato Ripasso is again separated from the skins and placed in tonneaux for 18 months before bottling. The bottles remain in the cellar for 6 months before being marketed. Pairings: Ripassa Zenato is a very structured Valpolicella Ripasso Superiore, excellent with first courses with red meat or game and second courses such as roasts and grilled meats.
