Description
The Verzin di vacca cheese is an exclusive product of Beppino Occelli. Verzin is a blue cheese made with selected cow's milk. Verzino means greenish, the color of the veins. This cheese originates from the famous Frabosa marble characterized by greenish veins. A cheese with a soft and creamy texture, it is excellent spread on warm bread or melted on pasta or gnocchi. Pairings: Excellent consumed on its own or spread on warm bread. Cheese used as a condiment for pasta and gnocchi. Recommended wine: Barolo, Barbaresco, and Passito. Storage: Store in a cool, dry place. Processing: The whole pasteurized milk is inoculated with a culture of Penicillium roqueforti and selected lactic ferments. This is followed by an acidification of the milk performed to avoid subsequent cooking and to keep the product unchanged. The subsequent aging is carried out in special rooms with controlled temperature and humidity.
