
Xoriguer is produced from wine alcohol and uses Pyrenean juniper as its creative botanical. It is distilled in four copper stills (the oldest is a 250-year-old Charente model) heated with direct wood fire following a centuries-old distillation process that has not changed over the years. On the island, Xoriguer is used in the preparation of pomada, a mix of Mahon gin, lemon juice, and sugar.
