
Xoriguer is produced from wine alcohol and uses Pyrenees juniper as a creative botanical. It is distilled in four copper stills (the oldest is a 250-year-old model from Charente) heated with direct wood fire following a centuries-old distillation process that has not been modified over the years. On the island, Xoriguer is used in the preparation of pomada, a mix of Mahón gin, lemon juice, and sugar.
