
Denomination: Grignolino d'Asti DOC Grape variety: 100% Grignolino Name: Emilio Alcohol: 14° Format: 0.75L Production area: Ponzano Monferrato (AL), Piedmont, Italy Description: Fermentation in steel barrels at controlled temperature of 24°C on the skins; after a few days, the must is separated. Following the malolactic fermentation at a controlled temperature of 20°C. Aging in steel for about 5/6 months, followed by aging in the bottle for 1 month. Clear and bright ruby red, initially fragrant with spicy notes, black pepper, and small red fruits, then it evolves in the glass offering a softer and broader follow-up with notes of sweeter fruit, enveloping and intense taste, with good persistence, with the light tannin characteristic of Grignolino barely perceptible. Pairings: cured meats and appetizers, first courses, white meats, bagna caoda. Ideal as an aperitif and with fish dishes.
