Denomination: Barolo Cannubi DOCG Grape Variety: 100% Nebbiolo Name: Cannubi Alcohol: 14° Volume: 0.75L Production Area: Cannubi, Barolo (CN), Piedmont, Italy Description: During vinification, maceration with submerged cap for about 30-40 days in wooden vats with frequent pump-overs. Aged in Slavonian oak barrels, the Barolo Cannubi is aged for about 30 months. After bottling, the bottles are placed horizontally for about six months and all bottles are numbered on the label. Blend of grapes from three vineyards: Vigna Gourat, Vigna Battista, and Vigna Nuova. The color is ruby red in youth, acquiring garnet hues over time, eventually developing delicate orange reflections. The nose is broad and pleasant, fragrant with fruity notes like raspberry and jam. Over time, it develops interesting spicy notes. On the palate, it is round with elegant tannins, a balance of red fruit, plum, blackberry, spicy notes, and tobacco. Harmonious with a long and persistent finish. Recommended pairing with pasta with meat ragù or risottos, red meats, roasts, game, braised dishes, and well-aged cheeses. Serving temperature 18-20°C. It is advisable to decant particularly aged bottles.
