We use only artichokes grown on our farm, harvested at the right maturity and processed as quickly as possible. The artichokes are peeled by hand, blanched in water and vinegar, and placed in jars with our extra virgin olive oil. The result is a product like homemade by our grandmother, preserving the fragrance of the artichoke and the oil.
