The "Tumminu" is an ancient unit of measurement from the island, equivalent to about 16 kg. The recipe includes one for each variety of ancient Sicilian wheat: Tumminia, Bidì, Russello, Maiorca, and Perciasacchi. This creates a rustic sensation typical of Belgian multicereality (especially Walloon) in the mouth, along with the natural hint of acidity, which American Wheat Ales have also inherited from Belgium. The second parallel with the Yankee style is a hop profile that expresses itself in very fresh citrus notes, which again brings the mind back to the native land of this beer.
