The addition of a small amount of this "young beer," rich in active yeasts, to one that is finishing fermenting and maturing is called "aufkr\u00E4usen." Through the addition of the Kr\u00E4usen, the mature beer reaches the "maximum organoleptic level" and the right effervescence. Aecht Schlenkerla Kr\u00E4usen is an unfiltered Lager, which the most famous brewery in Bamberg produces once a year. Light amber color, great balance, and good smoky aftertaste.
