Spaccarella is a sour beer with apricots, from the homonymous native variety of Sannio. It is obtained by producing a base beer that ferments and matures in barrels for about two years. Apricots are then added for maceration over several months. Following maceration, the beer is bottled to rest for about 3 months, during which refermentation occurs. The color is golden with orange hues. On the nose, the fruit is very well distinguished, accompanied by a complex set of olfactory sensations deriving from the wood aging.
